Fish is healthy - especially if you prepare it right. Grilled, tinned or poached and you're doing well ... Deep fried? Not so much.
Enter the simple tuna-in-a-can. It's a great source of protein and pretty low in 'junk' calories. Drain it off - you don't really want the liquids from the tin. Make a mixture of one teaspoon of mayonnaise and some mustard. Mix this with the tuna.
Now make a big salad. Some of my favourite ingredients are: avo, baby tomatoes, cucumber, feta cheese, spring onions, chickpeas, sprouts, spinach leaves and beetroot. Mix the tuna into the salad and dress with a bit of olive oil and balsamic vinegar.
Serve on a couple of rice cakes (I usually pile on so much salad that the rice cakes disappear!)
