Researchers have divided human eating patterns into two distinct groups: low fat and high fat. The amount of fat a person consumes is the strongest predictor of weight gain but it does not predict that the person will be obese. In other words, it is not a simple equation that decides that the more fat we eat equals the more fat laid down in our bodies. 

In a study of young men who ate either low or high fat diets, there were differences in appetite, basal metabolic rate, heart rate and how quickly the body digested fat and starch. So weight depends to a certain degree on what we choose to eat but there is more complexity involved.
