Where possible, use a low fat alternative instead of a high fat one.
You could also use less butter or fat rather than the amount that you are currently using. Every teaspoon makes a difference to the number of calories you are taking in as well as to your health (cholesterol levels, etc).
A great alternative would be to use a non stick, low fat spray. In this way you would be adding far fewer calories to your meal instead of hundreds that are gained when using butter or fat.
You could add more flavour to your meals by using spices if you find that the taste is not quite up to your standard.
