To make a salmon salad:
combine salmon, fat-free cream cheese and some low fat mayonnaise
add salad vegetables - cucumber, cherry tomatoes, red onion and olives are excellent choices
add a pinch of salt and pepper to taste.
You could replace the salmon with tuna, if you have this lunch regularly and need a change or if you do not enjoy the taste of salmon. You could also replace the mayonnaise with plain yoghurt.
