One of the best things in life is pasta, in my book. It truly is a 'comfort' food that is delicious, sensual and filling. Life just wouldn't be as good without it. However, unfortunately, between the high gluten, high carb, high glycemic index of refined white wheat flour, pasta is usually something that needs to be severely limited - yeh right, 1/3 of a cup of pasta! What a tease. Brown, grainy tasting whole-wheat pasta just isn't the same taste and texture, albeit, it may be a little better for you than refined white flour (glue paste). I have found better tasting pastas, (and you can't tell it's not 'real' pasta), made from soy, corn and brown rice flour (find them in whole foods/health food section).
Honestly, you can't tell the difference, and these are gluten free and whole grain, so they are better on the glycemic index. However, there are still calories and carbs included, and as such must be limited if you are dieting, though not as much. Now recently, I have been blessed to discover there is pasta made with glucomannan flour ("konjac"), which is a water-soluble polysaccharide fiber. It's fat free, calorie free, carb free, and totally guilt free. Yes! Look in the Asian foods section for Japanese Shiritiki or Konnyaku noodles, or Chinese Moryu or Juruo. Add some nice healthy pesto or tomato sauce, or just plain olive oil and garlic, and add some good grated cheese, and you are having a lovely experience that is good for you! Hold the guilt! Mangia!
