Unless you are about to hit the gym, low carb breakfasts are a great way to start your day. You'll need just a touch of carbs for quick energy, plus protein for sustained energy and body health. There is a low carb breakfast that I used to eat regularly that was delicious. I made an egg white omelet and topped it with avocado. I got the protein I needed from the eggs and a bit of good fat from the avocado. A grapefruit half is good accompaniment with this breakfast.
When I knew it was going to be a while until lunch, or I felt very hungry, I would add a fruit smoothie to my low carb breakfasts. Just put some milk (I use soy) and ice in your blender. Blend that until the ice gets slushy. Then, slowly add in some of your favorite fruits. I like to use cherries and bananas. If you get frozen cherries, you won't have to worry about pits. These types of smoothies also make great snacks on hot days.
The most typical low carb breakfasts are omelets. If you like eggs, you are set for days. You can add all kinds of ingredients to an omelet. I make them for dinner sometimes using more dinner-like ingredients. I enjoy feta cheese, prosciutto, tomatoes, onions and spinach. It's so healthy because you get vegetables in the mix as well. Moreover, it's delicious!
When you can't stop the craving for pancakes, waffles, muffins or other carb-filled foods, I suggest using a carb-lite substitute. You can find them at a health food grocery store like Whole Foods or Wild Oats. Also, Atkins produces several pancake and waffle mixes that are low in carbs. They don't quite taste like the real thing, at least to me, but they certainly help the craving.
