Low-Carb Diets for Beginners

What is the problem with carbohydrates? Why do so many diets suggest eliminating or severely restricting carbs?

Here’s the reasoning behind the shift: Carbohydrates, particularly the "bad carbs" such as white potatoes, rice, pasta and bread, cause a quick rise in blood sugar. High blood sugar levels result in increased insulin levels, and increased insulin levels lead to weight gain because of increased hunger. Researchers quote doctors like Dr. Timothy Johnson, ABC Health Correspondent, who explained that low-fat diets fail too many people. "The theory was that a low-fat/high-carb diet would control weight and help prevent killer diseases. But most of the studies that followed actually failed to show a direct link between fat in the diet and heart disease and cancer." -

There are over half a dozen low carb diets to choose from, including Dr. Atkins New Diet Revolution, Protein Power, Neanderthin, The Carbohydrate Addict's Lifestyle Plan, Life Without Bread, and others. All of them, however, have one thing in common -- a very strict reduction in the consumption of carbohydrates

Look for a diet that includes these factors:

• Includes heart-healthy fats
• Includes protein foods
• Includes a wide variety of allowable foods
• Includes high-fiber foods

In general, low-carbohydrate diets focus on meat, poultry, fish, dairy products, eggs and some nonstarchy vegetables. The diet excludes or limits most grains, beans, fruits, breads, sweets, pastas and starchy vegetables. Depending on the plan, some low-carb diet plans allow fruits, vegetables and whole-grains.
