MUSHROOM SOUP
2 cans beef broth or 3 cups homemade chicken broth
1/4 cup onion, 1 1/4 ounces
8-12 ounces fresh mushrooms, coarsely chopped
Butter
1/2 cup heavy cream
Saut?the onion and mushrooms in butter until tender. Add the broth; bring to a boil. Remove from the heat and stir in the cream.
Makes 4 servings

With 8 ounces mushrooms:
