DOTTIE'S CREAM OF GREEN CHILE SOUP
4 ounce can chopped green chiles
1 chipotle chile, chopped (I used a pinch of powdered chipotle)
2 cups chicken broth
4 ounces cream cheese, softened
1/3 cup heavy cream
Salt and pepper, to taste
Put all of the ingredients in a blender and puree until smooth. I put it all in a medium pan and used my stick blender to puree it. Heat until hot, but not boiling.
Makes about 4 servings
Do not freeze
Per Serving: 192 Calories; 18g Fat; 5g Protein; 3g Carbohydrate; 1g Dietary Fiber; 2g Net Carbs
This came out very hot, but my husband loved it that way. I think it would be good with some shredded chicken added. The only thing I didn't care for were the bits of peel from the green chiles. They didn't get pureed very well with the stick blender.
