SAUTEED SPINACH WITH MUSHROOMS AND ONIONS
1-2 tablespoons olive oil
1 teaspoon garlic, minced, 1 clove
1/4 cup onion, chopped or slivered, 1 1/4 ounces
4 fresh mushrooms, sliced, about 2 1/2 ounces
1/2 pound fresh spinach
Salt and pepper, to taste
Heat the oil in a large skillet on medium heat. Cook the onion, mushrooms and garlic until tender. Add the spinach (the pan will be very full, but the spinach will cook down quickly); toss and cook just until wilted. Season with salt and pepper.
