CHEESY SPINACH CASSEROLE
20 ounces frozen chopped spinach, thawed and drained well
1 small onion, slivered, 2 1/2 ounces
2 stalks celery, finely chopped
8 ounces fresh mushrooms, sliced
2 tablespoons butter
1/2 cup mayonnaise
1/2 teaspoon salt
1 teaspoon pepper
1/4 teaspoon garlic powder
4 ounces cheddar cheese, shredded
Saut?the onion, celery and mushrooms in the butter until very soft and a little browned, about 20 minutes. Combine all of the ingredients in a greased 1 1/2 quart casserole or 8x8" baking pan. Bake at 350? uncovered, 30-40 minutes or until nicely browned and bubbly.
Makes about 6 servings

This is based on Dottie's Green Bean Casserole but with spinach. It's very good but I think I used a little too much spinach in mine. I used a 16-ounce bag plus a 10-ounce box. I think that two 10-ounce packages would be about right so I've edited the recipe for that amount. Click the photo to see a close-up.
