SLOPPY DOG SALAD
1 1/2 servings My Favorite Sloppy Joes, heated
1 Oscar Mayer bun-length hot dog (about 2 ounces) *
2 ounces romaine lettuce, chopped
1/2 ounce onion, chopped
2 ounces tomato, chopped
1 ounce pickles, chopped *
Slice the hot dog on the diagonal and pan-fry until browned on both sides. Put the lettuce on a large salad plate. Top with the Sloppy Joe mixture and the cooked hot dog. Garnish with the onion, tomato and pickles.
Makes 1 serving
* Or use your favorite brand of hot dogs. The kind I used has 1 carb per dog. I used 3 homemade sugar free bread & butter pickle chips because that's what I had on hand. You could use dill pickles or Mt. Olive sugar free sweet pickles.

This is my take on Rachael Ray's Sloppy Dawgs recipe. She added Sloppy Joe sauce to cut up hot dogs and served them on buns. I added cut up hot dogs to my regular Sloppy Joe recipe and served it over lettuce. This was really good but I'd do a couple of things differently next time. First, I'd omit the chopped onions because I couldn't really taste them. Why add unnecessary carbs? The other thing I'd do is use iceberg lettuce. I think that the flavor of iceberg would go better with this than romaine. You can make this induction-friendly by having a smaller serving of the Sloppy Joes.
