DAWN'S JALAPE袿 CHICKEN SALAD
1/2 cup mayonnaise
1 teaspoon lime juice
2 cups diced cooked chicken, shredded
1 stalk celery, chopped fine
1/2 small red onion, chopped fine, 2 ounces
2 ounce jar pimiento, chopped
2 tablespoons cilantro, chopped
2 tablespoons pickled jalape駉s, chopped fine
Salt and pepper, to taste
Mix all of the ingredients and season to taste with salt and pepper. Chill well before serving.
Makes about 4 servings
Do not freeze

This is a low carb version of a recipe from Cook's Country magazine. The flavor of this salad isn't all that different than a typical chicken salad other than the heat from the jalape駉s. I used half the amount the original recipe called for and it's still very hot. The flavor is good, but I'm not sure if I like my chicken salad to be hot.
