CRAB PASTA SALAD

CRAB PASTA SALAD
2 ounces uncooked Dreamfields elbow or penne pasta *
6 ounces crab meat, drained well
1/4 cup mayonnaise
1 stalk celery, finely chopped
2 green onions, chopped
1 teaspoon chives, minced
1/8-14 teaspoon salt or Spicy Seasoning Salt
1/8 teaspoon pepper

Cook the pasta according to package directions; drain well. If using penne, cut each noodle into 2 pieces. Combine all of the ingredients in a medium bowl; chill before serving.

Makes 2-3 servings
Do not freeze

* If you don't have a kitchen scale, count out 40 pieces of penne.

This is my first experiment with Dreamfields pasta. It tastes good, but it has a sticky substance all over it after cooking. I'm a little concerned that the pasta might cause some digestion problems for me so I will eat only a small portion of this salad at a time.

You can use any kind of crab meat in this. I found a 6 ounce pouch of jumbo lump crab meat near the fresh seafood counter at Wal-Mart. It's nicer than any canned crab meat I've tried and has better texture and flavor than the Chicken of the Sea pouches I've tried. I had to drain off a little liquid, but the Chicken of the Sea brand was nearly all liquid for about the same price, I think, and it only has 3 ounces per pouch.
