C.A.B.L.T. SALAD
(Chicken, Avocado, Bacon, Lettuce and Tomato)
Per serving:
2 ounces leaf lettuce
1 boneless chicken breast, grilled and sliced
1/2 small avocado, diced
1/2 cup Roma tomato, sliced
2 pieces bacon, fried until crisp
2 tablespoons Chipotle Ranch Dressing (see recipe below)
Top the lettuce with the remaining ingredients; serve at once.
Makes 1 serving

This is a very good salad and quite spicy. If you don't like things hot, either cut back on the chipotle chile powder in the dressing or substitute regular chili powder. The flavor wouldn't be quite the same, but still good. This makes a huge salad and depending on the size of your chicken breast, you could easily get two servings for smaller appetites. Even my husband commented on how huge it was. Two ounces of lettuce makes a very large plateful and by the time you add all the toppings, it turns into a mountain of salad. CHIPOTLE RANCH DRESSING
1/4 cup ranch dressing
1/2 teaspoon chipotle chile powder
1 tablespoon cilantro
Mix everything and chill before serving. Makes 1/4 cup dressing.
