ROBIN'S QUICK THOUSAND ISLAND SLAW
2 cups cabbage, shredded, 5 3/4 ounces *
1/3 cup mayonnaise
2 tablespoons low carb ketchup
2 tablespoons sugar free sweet pickle relish
1 tablespoon dill pickle relish
1 tablespoon fresh parsley, chopped
Combine everything in a large bowl and chill well before serving.
Makes about 4 servings
Do not freeze
* To make 5 3/4 ounces, fill your 2-cup measuring cup to the rim, not the 2 cup mark.

This is from Robin Miller of Food Network. Robin's recipe called for half green cabbage and half red cabbage but I only had green on hand. The photo on the Food Network site looks like it has green cabbage and shredded carrots, not red cabbage. I wasn't sure if the hamburger relish she called for was a sweet relish or a dill relish so I used sweet. However, after tasting the slaw, I thought it needed a little tang so I added a tablespoon of dill relish and that made an improvement. This tastes ok, but it's a little heavy on the mayonnaise flavor and doesn't have that bright fresh flavor that I like in coleslaw. I prefer my other slaw recipe so I doubt if I'd make it like this again.
