PAN-FRIED TILAPIA
Tilapia fillets, thawed (about 4 ounces each)
Salt, pepper or other seasonings
1 tablespoon butter per fillet
Heat the butter in a nonstick skillet over medium-high heat. Season the fish then fry until golden brown on both sides about 8-10 minutes.

I think I like fish cooked this way even better than broiled with butter. The fish got more browned all over and made contact with the butter more.
