SPAM 'N PEPPERS 'N SPAM 'N EGGS 'N SPAM
2 tablespoons butter
2 large green peppers, diced, 5 ounces each
1 small onion, diced
6 ounces Spam or ham, diced, half a can
Salt and pepper, to taste
1 ounce cheddar cheese, finely shredded
6-8 fried eggs
Heat the butter in a large non-stick skillet on medium-high heat. Saut?the peppers, onion and Spam until nicely browned; season to taste with salt and pepper. Meanwhile, fry the eggs in another skillet. Divide the Spam mixture amongst 3-4 plates. Top each with 2 fried eggs then sprinkle a little cheese over the top. Serve at once.
Makes 3-4 servings

I kind of hate to admit that I use Spam occasionally. I had a half can of it in my freezer and had to think of a way to use it up. Spam has a few more carbs than ham, but you could easily substitute ham in this recipe. I find it's often cheaper to buy a can of Spam to use in place of ham rather than to have to buy a large chunk of ham and have it sitting around. I don't like using ham that's been frozen because it loses all its water when defrosted and becomes a bit tough and dry, so when I need just a small amount for a recipe, I'll sometimes turn to Spam. Shhh. Don't tell anyone.
