AUNT LINDA'S CRUSTED PORK CHOPS
Per serving:
1 thick boneless pork chop, preferably with a little fat on it, about 6 ounces
1 tablespoon mayonnaise
1 ounce parmesan cheese, 1/4 cup (the kind in a can)
1 thin slice of onion
Salt, pepper or desired seasoning
1 teaspoon butter, optional
Place the pork chops in a greased baking dish. Season liberally on both sides. Top each with mayonnaise, then parmesan. Top each with an onion slice and a pat of butter. Bake, uncovered, at 350-375?for 1 hour (see my comments below) or until the meat is done. Check them well before the hour is up. I recommend checking them after about 35-40 minutes.

These have potential. They were good, but I think they'd be better if the pork chops had a bit of fat on them, but that's hard to find these days. Be sure to use thick chops or they will dry out and become tough. I started mine at 350? thinking that a longer, slower baking would be better, but after about 1/2 hour, they weren't getting very brown and I suspected they were nearly done. I think I'd do them on 375?next time and check after 30 minutes. The recipe didn't say to season the meat, but I did anyway. I used some of my Spicy Seasoning Salt on both sides before adding the topping. I recommend seasoning them liberally. I might also add some garlic powder to the topping next time. One other thing I might add is a pat of butter on the top of the onion slices. It came out looking kind of dry.
By the way, there's no relation to the Aunt Linda in this recipe and myself. She's the aunt of the person who posted this recipe online so I kept the name.
