PATTIES PARMIGIANA
1 1/2 pounds ground beef
1/4 cup onion, minced
1 clove garlic, minced
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 egg, beaten
2 ounces parmesan cheese, grated, 1/2 cup (I used the kind in a can)
Cooking oil
8 ounces tomato sauce
1 teaspoon Italian seasoning
6 1/2-ounce slices mozzarella cheese

Mix the ground beef, onion, garlic, Worcestershire sauce, salt and pepper well. Shape into 6 patties. Dip the patties in egg then coat them with parmesan cheese. Heat a little oil in a large non-stick skillet. Brown the patties over medium heat, turning once to brown the other side. Drain the fat. Combine the tomato sauce and Italian seasoning; pour over the patties. Cover the skillet and simmer on low heat 15 minutes, until the meat is cooked through. Top each with a slice of mozzarella; cover the pan and heat until the cheese is melted.

Makes 6 servings

Although these tasted pretty good, they could me made much more simply than the above method. First of all, I made the big mistake of not using a non-stick skillet. The parmesan cheese stuck very badly to the pan and I had to scrape the patties off to turn them. I think that most of the parmesan was lost in the grease. Once the patties were somewhat browned, I transfered them to a non-stick skillet and topped them with the sauce. I suspect the carb count might really be a bit less because a lot of the sauce ended up with the grease as well.

What I might do next time is grill the patties (skipping the parmesan coating) on my indoor grill, then top them with some ready-made spaghetti sauce, some shredded mozzarella and the parmesan cheese sprinkled over the top. I'd bake them in the oven a few minutes to get the cheese melted.
