My favorite thing to do with leftover meatloaf is to make my Meatloaf Patty Melt. So, I tried to create a good basic meatloaf just so I could make some. I decided not to put on any kind of topping so that I could later add whatever kind of sauce I'd like on my Patty Melt. Creamy BBQ Sauce is very good for this.
I think that next time I make this, I will only bake it for about 35-40 minutes until it reaches 135?in the center. By the time it reaches 140? it's a little too well done.
