WILD "RICE" BARON
1 medium fresh cauliflower, about 25 ounces
1 pound ground beef
1/2 pound fresh mushrooms, sliced
1/4 cup celery, chopped, 1 stalk
1/2 cup onion, chopped, 2 3/4 ounces
2 tablespoons soy sauce
1/2 cup sour cream
8 ounces cream cheese, softened
1/2 teaspoon pepper
2 teaspoons salt, or to taste
1/4 cup slivered almonds, 1 ounce
Shred the cauliflower; place in 2 1/2 quart greased casserole. Cover and microwave on HIGH about 7 minutes or until tender. Meanwhile brown the ground beef, mushrooms, celery and onion; drain the fat. In a small bowl, mix the soy sauce, sour cream, cream cheese and pepper and salt. Add the ground beef mixture to the cauliflower; stir in the sauce and mix well. Top with the almonds. Bake, uncovered, at 350?for 30 minutes until bubbly and the nuts are browned. Stir in the almonds before serving.
Makes 8 servings

I got this idea from an old recipe that called for wild rice. I thought the toasted almonds might make a good substitute for the crunch and toasty flavor of wild rice. Although this tastes ok, it's a bit bland and I won't make it again.
