CREAMY BEEF & VEGETABLE CASSEROLE
1 pound ground beef
1 small onion (about 2 ounces)
2 stalks celery, chopped
12 ounce package frozen California Style vegetable blend, cooked and drained
1/2 cup mayonnaise
Salt and pepper, to taste
Other seasonings, to taste
8 ounces cheddar cheese, shredded
Brown the ground beef with the onion and celery, seasoning with salt and pepper to taste; drain the fat. Put the meat mixture in a 2-quart casserole and stir in the cooked vegetables and mayonnaise. Add additional seasonings to taste. Stir in the cheese. Bake at 350?about 30 minutes until hot and bubbly.

This isn't an attractive dish but it is simple and tasty. I don't list specific seasonings because you can season this any way you like. Mine came out kind of yellow because the seasoning blend that I used has some turmeric in it. Click the photo to see a close-up.
