STRAWBERRY-BANANA-BANANA
1 small package diet strawberry-banana gelatin (or any flavor you like)
1 cup boiling water
1 cup cold water
6 ounce container "banana cream pie" low carb yogurt (or any flavor you like) *
1/2 cup heavy cream, whipped **
Prepare the gelatin mix as directed on the package. Chill until it has thickened slightly. Beat in the yogurt with an electric mixer until frothy. The mixture won't be very thick but you will see it become slightly foamy. Chill until almost set then fold in the whipped cream. At this point you can let it set up a bit more and beat the mixture again until fluffy. Divide into serving dishes and chill until completely set.
Makes 6 servings
* The nutritional counts are based on using Kroger's CARBmaster yogurt which has 4 carbs per container.
** You can add a little sweetener of your choice but it's optional.

This started out as a recipe called Raspberry-Raspberry that I used to make years ago using regular sugar-sweetened gelatin. I had a problem with the box of raspberry gelatin that I bought to make this because they forgot to put the gelatin and sweetener in the mix. I got a refund and bought another brand this time and decided to get strawberry-banana instead of raspberry after hearing that there might be a problem with all brands of diet raspberry gelatin.
So, instead of using raspberry yogurt, I used banana cream pie flavor. I thought about making a little whipped cream to top this dessert but on a whim folded the whipped cream into the dessert instead. Then, the recipe evolved even more. When I thought I'd try beating the dessert with the mixer after adding the whipped cream, it mostly deflated. Then, I got the idea to let it chill and set up more and then beat it again to get it fluffy. I didn't get all that much more fluffy but I got six servings instead of just four. Because of the extra liquid from the cream, this doesn't set up really firm. It's rather light and airy. I'll use a different flavor of gelatin and yogurt next time because I wasn't all that keen on the banana flavor. I may revise my star-rating once I've tried this in a different flavor.
UPDATE 4/3/14: Today I made this with cherry jello and cherry CARBmaster yogurt. Instead of bothering to whip the cream this time, I replaced about 1/4 cup of the cold water with heavy cream. The cherry version is yummy. My next plan is to use a package of orange jello and add tropical fruit flavored yogurt to it. I changed my star-rating to 4 stars.
