ORANGE FLUFF WITHOUT ASPARTAME
1 packet unflavored gelatin
1/4 cup cold water
1 package unsweetened orange Kool-Aid mix
1 cup granular Splenda or equivalent liquid Splenda
1 tablespoon freshly squeezed orange juice, 1/2 a small orange
1 teaspoon orange peel
1/2 teaspoon orange extract
12 ounces low carb vanilla yogurt
1 cup heavy cream, whipped
In a large glass bowl, sprinkle the gelatin evenly over the cold water and let stand 5 minutes to soften. Microwave on HIGH 1 minute or until boiling. Whisk in the Kool-Aid mix, Splenda and orange juice. Whisk until the gelatin and Kool-aid are completely dissolved. Whisk in the orange peel, extract and yogurt. Very gently fold in the cream until no white streaks remain. Chill at least 2 hours until set.
Makes 8 half-cup servings
Do not freeze
With granular Splenda:

This started out as an experiment to see if I could make my Orange Fluff with Splenda instead of having to use diet jello, which has Aspartame. It was definitely a success and I like the flavor even better. The carbs are also a bit lower because I used low carb yogurt instead of sugar free diet yogurt.
