KEY LIME FLUFF
1 small package sugar free lime Jell-0
1 tablespoon freshly squeezed lime juice, juice of 2 limes
3 tablespoons water
2 6-ounce containers sugar free key lime yogurt
1 teaspoon lime peel, very finely grated
1 cup heavy cream, whipped
Bring the lime juice and enough water to equal 1/4 cup to a boil. In a large bowl, dissolve the Jell-O in the juice/water mixture, stirring about 2 minutes. Whisk in the yogurt and lime peel until well blended. Very gently fold in the cream until no white streaks remain. Chill at least 2 hours until set.
Makes 8 half-cup servings

I found this recipe in a Jell-O ad and tweaked it ever so slightly to make it low carb. I added the fresh lime juice and peel to give it a more realistic lime flavor. It adds a nice tang too. This light, fluffy dessert would also be delicious with lemon jello, lemon yogurt and fresh lemon juice. Orange would also be nice. If you can't get those yogurt flavors, use vanilla yogurt. It won't be quite as flavorful, but will still be good.
