YOGURT CREME
1 envelope unflavored gelatin *
1/4 cup Da Vinci sugar free syrup, any flavor
1 3/4 cups plain full-fat yogurt
3/4 cup Da Vinci sugar free syrup, any flavor
In a small shallow bowl, sprinkle the gelatin lightly and evenly over 1/4 cup sugar free syrup; let stand 5 minutes to soften. Meanwhile, put the yogurt in a medium bowl. When the 5 minutes are up, bring the 3/4 cup syrup to a boil in a 2-cup glass measure in the microwave. Add the softened gelatin to the boiling syrup and stir for 2 minutes to completely dissolve the gelatin. Stir the gelatin mixture into the yogurt, mixing well. Chill until set, at least 3 hours. If you stir the mixture occasionally will help it chill and set up quicker.
Makes 4-6 servings

I thought I'd try making a version of Panna Cotta - Another Variation using plain yogurt instead of heavy cream. Although the carb count goes up a little, the calories and fat grams are a fraction of the original. Although it's not as rich as real Panna Cotta, it has a nice, silky texture. I used raspberry syrup this time.
