EVE'S PORK SKIN FLOUR MINUTE MUFFIN
1/2 cup ground pork rinds (1 ounce)
1/2 teaspoon baking powder
1 egg
Herbs and seasonings of your choice, optional *
Mix all of the ingredients in a 2 cup measuring cup with a fork. Microwave on HIGH about 1 to 1 1/2 minutes until set but still moist.
Makes 1 serving
* Eve added 1 tablespoon olive oil. I omitted the oil because pork rinds are pretty oily and that might be one reason why mine came out so dry. She also added a pinch each of dried parsley and sage. I put in 1/4 teaspoon of my KFC Chicken Seasoning. That tasted nice but I might try putting in a little onion powder and chives next time instead. Avoid salty seasonings because the pork rinds and baking powder are quite salty.

Although mine came out a little tough, these do have possibilities. I microwaved mine the full 2 minutes that Eve suggesetd and I think that 1 to 1 1/2 minutes would have been enough time in my microwave. I also will try making the next one in a shallow bowl rather than a measuring cup to see if it will cook more evenly. Eve served hers for breakfast but I'm thinking that they'd be a nice accompaniment to a bowl of soup. The 1 carb in this comes from the baking powder plus a trace of carb from the herbs and spices.
