1 batch Chewy Peanut Butter Candy
3 ounces salted peanuts, coarsely chopped, a scant 2/3 cup before chopping

After you make the peanut butter mixture, let it stand for a few minutes to set up a little so it won't be quite as sticky to work with. Take 1 tablespoon of the peanut butter mixture and roll it into a ball with your hands. Press the ball into the peanuts to completely cover the outside well. Form in little log-like shapes, place on a nonstick foil or wax paper lined pan and freeze until firm. Be sure to use salted peanuts for an authentic flavor. Store in the refrigerator or freezer. I recommend storing them in the freezer. There is no significant difference in the carb counts per serving using either granular or liquid Splenda.

In case you'd like to split the mixture up into a different number of bars, here are the counts for the whole batch, including the peanuts. You may need more peanuts if you make larger bars because you'll have more surface area to cover.

With granular Splenda:
Per Whole Batch: 1375 Calories; 100g Fat; 91g Protein; 40g Carbohydrate; 9g Dietary Fiber; 31g Net Carbs

With liquid Splenda:
Per Whole Batch: 1351 Calories; 100g Fat; 91g Protein; 34g Carbohydrate; 9g Dietary Fiber; 25g Net Carbs

Because these would turn too soft and sticky to put out for company, set these yummy little snacks aside for yourself in the freezer for those times when you need a little nibble of something. They're filling, full of protein and very low in carbs. Best of all, these have no sugar alcohols or polydextrose to cause any unpleasant digestive problems. Click the photo for a close-up.
