CHRIS'S UGLY GREEN BEAN SNACK
16 ounce package frozen whole green beans, do not thaw
2 tablespoons oil, about
Salt, to taste
Line a large baking sheet with heavy foil. Cut open the bag of green beans and pour in the oil. Close the bag and shake to coat the beans completely. Pour out onto the prepared baking sheet. Bake at 275?for about 1 1/2 to 2 hours or until the beans are very dark and crisp, but not burnt. Remove from the oven and immediately sprinkle with salt. Chris said that they can be stored at room temperature in an airtight container, but I don't recommend that unless yours are completely crisp and you live in a dry climate.
Makes about 2 cups or four 1/2-cup servings

These are all the rage at Low Carb Friends right now so I had to try them. It took forever for any of mine to get crisp and by that time they were somewhat burnt. Not all of them got crisp and the ones that are still a little green are kind of chewy like fruit leather. It may be the high humidity here in Houston that kept mine from getting crisp. They do make an interesting snack though. They don't really taste all that great, and the dark crisp ones are somewhat bitter, but it's hard to stop eating them for some reason. It's difficult to describe the flavor, but maybe something like a green bean flavored raisin. If you make these, be careful to portion them out because they are pretty carby and it would be easy to find yourself eating half the batch. By the way, the 16 ounce bag of green beans ended up weighing only 3 ounces after baking. I only rated them 2 stars because I probably won't make these again.
