QUESADILLA
1 La Tortilla Factory tortilla
1 teaspoon butter, softened
1 ounce cheddar cheese, shredded
1 tablespoon salsa
Heat a large nonstick skillet over medium heat. Butter one side of the tortilla; cut in half. Place the tortilla halves butter sides together. Top with the cheese. When the pan is hot, carefully lift the top tortilla half and place it cheese side up in skillet. Place the remaining tortilla half on top, butter side up. Fry until the bottom is browned; carefully flip and brown the other side. Cut into wedges and serve with salsa.

(the low rating is due to the tortillas and not the recipe itself)
One bite was more than enough. The tortillas were terrible tasting and the rest went in the rubbish. If you can find good-tasting low carb tortillas, the recipe should work just fine. This is how I've always made regular quesadillas.
