I have several good recipes that call for Garbanzo beans, but I do not like their taste/texture very well. Are there any other beans that would be good substitutes for Garbanzos?
Also, I have high triglycerides/cholesterol and eat quite a bit of Angel Food cake everyday with blackberries or strawberries. Although the cake is low in fat, I fear I may be getting too much sugar in the cake itself. Is there a way I could make the Angel Food cake without the sugar, and just add a little Stevia extract? All the mixes in the stores I've seen have sugar added.

Hi Mike,
In case you open this answer first, I replied to your Garbanzo bean question in a separate message.
Now, let's talk about your Angel Food cake recipe.
If you are concerned about your cholesterol level, you might want to know that latest studies showed that you should watch your carbohydrate intake and on a low carb diet, it's a better chance that your cholesterol number will improve, especially your "good" cholesterol.
This being said, the simple answer to your question is, use any *pourable* sweetener, Stevia including, to substitute the sugar in your recipe 1:1. I mean pourable because the volume matters a lot in this case.
Some low carb forum members shared their experience with substituting almond flour for cake flour. I didn't try it but I often bake almond pound cake and my family likes it a lot.
Just in case you are curious, here's the recipe (don't be frightened by the fat amount: it makes the cake very high in fat burning (ketogenic) index:
Low Carb Almond Flour Pound Cake
1 cup butter (2 sticks) softened at room temperature
1 cup Splenda
5 eggs - at room temperature
2 cups almond flour
1 tsp. baking powder
1 tsp. lemon extract
1 tsp. vanilla extract
Cream butter and Splenda well. Add eggs - one at a time - beating well after each. Mix almond flour with baking powder and add egg to mixture a little at a time while beating. Add lemon and vanilla extracts. Pour into greased 9"-10" springform pan (or 9" round cake pan) and bake at 350淔 for 50-55 minutes.
