AnswerThe trouble with this purine theory is that most animal-food is already high in purines(ie meats/fish/poultry etc.) with some foods such as organ-meats, and some fish(anchovies,sardines,mackerel and herring) being especially rich in purines. If one believed in this theory, one would have to drastically reduce the amounts of most, if not all, animal-foods in the diet - and, quite frankly, while high-(unrefined)steamed/cooked carb diets are undoubtedly healthier than eating fried junk-food, they certainly can't compare to diets including significant levels of raw-animal-food, in terms of health(I should mention that most newcomers to rawpalaeodiets seem to be disgruntled ex-Raw Vegans/Fruitarians/Vegetarians).
More to the point, I used to eat very high amounts of raw organ-meats at various times, for reasons of taste/convenience etc., and have never experienced gout or anything similiar( even the few raw zero-carbers have also never mentioned having gout etc.) My suspicion is that cooked-animal-food in general may well be a factor behind increases in gout(with obesity being, of course, even more important as a factor, overall), but that the effects of cooked-meat re gout are more likely to do with the harmful AGEs(advanced glycation endproducts/acrylamide byproducts etc.) created through the process of cooking.
My usual recommendations re eating organ-meats is to have a wide variety of them and to have at least c.10% of their animal-food-intake in the form of organ-meats - this is due to the higher nutrient-levels in organ-meats and because RPDers routinely report faster recovery-rates if they include them in their (RAF) raw-animal-food diet. Since raw organ-meats are a lot easier to digest than muscle-meats, I recommend eating much higher amounts of them for those rawfoodist-beginners whose digestive-system is in serious trouble, so as to make things easier, initially. Obviously, one should, anyway, also consume a wide variety of muscle-meats as well, along with the organ-meats, if one's digestive-system is healed.
