You've mentioned in a number of places leaving meat out of the frig for afew days. Could you say how this changes the meat; any health benefits that ensue from this; are there any stages of aging you particularly like?; any difference between organ and muscle meat in regard to "aging" it afew days or longer; or any other details about this that you would like to mention.
Also, on your recomendation I read some parts of the writing of that arctic explorer you've spoken of. He describes eating fish that has been "aged" quite a while as having a delicious taste as good as fine aged cheese. Any experience with this, particularly something that tastes very good, as opposed to "high meat" which is for medicinal value only? Thanks, Alan
Answer*Forgot to mention, to make high-meat you also have to air the meat outside the fridge, once every 3 to 4 days(I do it every day, on those times I make high-meat, so as to speed things up). Without air the bacteria can't so easily predigest the meat properly.*
Re changes:- I just leave the meat out of the fridge on occasion, and then only for a few days. there's hardly any change, except the meat becomes a little tender, and becomes a little smaller in size(eg:- tongue) - useful, if , like me, you start the rawpalaeo diet with weakened teeth from former allergies.
If I leave organ-meats in the fridge for a month in a sealed container(ie making high-meat) after a couple of weeks a bacterial slime covers the meat, and eventually, if I leave it there for weeks, it turns into a liquid soup.
It's best to eat it after it's been there about a month to six weeks\(when there's a lot of slime on the meat, but the inner part's still solid), and to continually replenish jar with more meat left to age in its turn. Some RPDers leave the meat out for much longer, but I don't like that. There's no particular difference between muscle-meat and organ-meats re this, excpet that organ-meats are softer, so presumably become liquid faster).
The health benefits of "high-meat" are increased alertness, increased concentration levels etc. You basically feel all wired-up and it's a great mood-enhancer. The only reported side-effect is an occasional inability to get to sleep due to being too wide-awake, but that's about it(eat it in the mornings if you are at all worried about this aspect). That said, it's not generally recommended for RPDers unless they've been doing the diet for at least two years, as they are expected to get used to the taste of fresh, raw animal food, first.
Re aged fish:-
I cannot stand the taste of aged raw fish, let alone aged raw eggs or aged raw muscle-meat. However, tastes vary greatly between RPDers, so others do like it.
I only use ox-tongue and ox heart or kidney re aging meat as they are the only things I like in that form - otherwise I can't keep the stuff down, but these three foods are absolutely delicious, from my point of view.
I'd suggest trying out several different varieties of high-meat and sampling them in, at first very small amounts, until you find the meat you like, and thens tick to that alone.
