AnswerAs far as I'm aware, meats aren't generally low in potassium. People told to go on low-potassium diets are, after all, usually told to avoid meats, as a result. Mind you, potassium isn't usually an issue, if one avoids the use of processed supplements - excess sodium/calcium is, on the other hand, a much bigger issue as modern diets include ever higher amounts of sodium(through salt used in most processed foods etc.) and increasingly lower levels of potassium.
On the other hand, a few websites do seem to recommend meats on a low-potassium-diet:-

Other than that, pork appears to have the highest potassium levels as regards meats, with chicken having the lowest, according to some sources.
At any rate, potassium is more prevalent in fruits, vegetables and dairy products, overall.
