QuestionI was just diagnosed with an chicken egg allergy. Upon reading "hidden sources" I am most confused with lecithin. Is there a difference between "soy lecithin" and lecithin? The labels on packages are very overwhelming! Any helpful suggestions are welcomed! Thankyou.
AnswerLynda,
Chemically, lecithin is a phospholipid (phosphatidylcholine) and for pure lecithin, the source -- egg or soy -- doesn't make any difference.
However, when it's isolated either from egg yolk or from soy beans, it is extracted chemically or mechanically and depending on how clean and complete the process is, the difference may occur, this is why people allergic to eggs are advised against foods containing egg lecithin.
Soy lecithin isn't less allergic than egg lecithin, but if you are not allergic to soy, this kind of lecithin isn't bad for you.
