Questionhi, i am struggling to find information on the nutritional value of marrow bones. i have managed to find out the are high in fat. please can you tell me more as i love to eat them but am also very health concious. thanks
AnswerAll the resources I know of have told me that because of the fact that the marrow density, size, and fat content vary (because of diet, breed of steer, climate ect.) there is no way to be certain of the nutritional stats. The one thing that I can be certain of, THEY ARE ALMOST NOTHING BUT FAT. This is not a problem if eaten only on occasion and in moderation (trust me I know that's not easy!). Personally, I have learned to only eat them a few times a year. I like to roast them with Demiglace and then spread the marrow on crispy toast points (I am drooling right now!). Like all things moderation is the key and if you only have them a few times a year you appreciate it more.
