QuestionDo you know anything about these? The theory is that some carbs are actually OK to eat as they dont get broken down into sugar.
Rice is one of them.
Could be why orientals dont get obese-their main starch is rice not bread?
I have a problem losing weight but I can maintain it by eating low carb.
Initially I can lose weight low carb but its too tough so I switch to low glycemic then low cal and I'm back where I started.
Also, though I havent been tested, I have most of the symptoms of celiac disease. I feel better when I give up bread/wheat.
So,based on this,I am thinking of giving up breads/flour but keeping the rice as my only carb.
Rice flour bread is available and I like it.
What do you think?
AnswerDear Barb,
Be careful with rice if you suspect celiac disease unless it's rice flour. Rice shell can be too irritating.
I've just posted some information that can help you understand what exactly happens with grains and other carb-containing foods during digestion:

I also recommend you an excellent article "What is Resistant Starch, and What Can It Do for Me?" by Laura Dolson. She concludes: 'Don't Resist this Starch!' (lowcarbdiets.about.com/od/nutrition/a/resistantstarch.htm)
