I make my own peanut butter using unsalted dry roasted peanuts, canola oil and Splenda. My kids complain that it is not spreadable. I try not to add too much oil so it doesn't come out too runny either. Without using shortening, butter or margarine, what else can I add that would make my homemade peanut butter more spreadable without adding any ingredients that contain the bad fats? Instead of splenda, try a little agave nectar to sweeten and add fluid. Just remember that it is 3x as sweet as sugar. Or, try mix in some fattier nuts, like cashews. Additionally, you might consider using a different oil, like grapeseed or flaxseed oil that will be beneficial.
When I make my own nut butter, I try not to add too much oil, but some is needed to make is spreadable. Please let me know which of these you try and which works for you and the kids.
