Do you think some people have a different reaction to certain carbs than others maybe a different insulin spike? I get gassy and bloated on potatoes and will gain weight, but I can eat spagghetti no problem.
Also, why are potato chips low glycemic if they are potatoes and fried in fat? I am sure I was a chubby kid because I was fed a lot of chips.

It certainly is possible for different people to react to various forms of carbs differently.
In the case of potatoes vs spaghetti however, the latter has a far lower glycemic index because of the biochemical structure of pasta - so I am not surprised that you can eat moderate amounts of spaghetti without a problem. Pasta is actually a very good carb source - particularly when made from minimally processed whole grains.
Potato chips have less glycemic impact than boiled or baked potatoes because of the fat content - the overall glycemic impact of any food or mixed meal will depend upon the total combined mix - that is why you should always eat some protein and fat along with carbs - its best for the insulin sensitive to never eat carbs alone.
