QuestionI became vegetarian well over a year ago and since I don't cook much as a single male, have been eating lots of pasta and soy products like soy burgers, crumbles etc.(Morningstar and Boca). I'm not sure yet, but I wonder if all the soy has been causing the headaches I got soon after going veggie (weird thing is they are mild and only on the right side). Do you know if it's very common for these kinds of products to cause headaches? If they are in fact the cause for me, I don't know what I would eat since that is so much of my diet. What would I replace all the soy with? I"d hate to start eating meat again. Any feedback is appreciated.

So happy to hear about your somewhat recent transition to a plant-based diet!! Now the headaches could be attributed to any number of things. I really can't speak to what the direct cause is as I am not a physician. I can however, offer some insight as to other food options that you may want to explore to lighten up on the soy and corn starch. Both soy and corn should be eaten in moderation or not at all, if at all possible. They are hybrid foods and in most cases are genetically modified, therefore not natural, whole, organic foods. This impacts your health in many ways and there are several articles that explain this in more detail. In fact, I have written quite a few on the subject. However, explaining this is beyond the scope of this response so when you get a chance try to pull up a few to gain more insight into the subject.
As for other food options, try eating more fresh, organic, whole foods in the form of salads, fruits (fresh or dried), smoothies, nuts (namely walnuts and almonds) and stir-fry veggie dishes. Try substituting soy milk with almond milk. Consider using almond butter as it is good on sandwiches and crackers. Taboule is also a good option as it can make a great snack. Get spelt or rye bread instead of wheat as most wheat breads contain soy. You may also want to explore an alkaline diet. Again, there are several articles on this subject as well so when you have the time perhaps look into this option. I am suggesting an alkaline diet in your case because you are experiencing headaches when eating soy, corn and wheat products which may suggest that your current diet is too acidic.
