QuestionThree related questions if I may:
1. Does freezing meat kill all dangerous parasites, making it safe for raw consumption?
2. Similarly, does marinating fish and seafood in lemon or lime juice kill all parasites?
3. What about bacteria - Is there any way to kill potentially bad bacteria (like E. Coli) without killing the good bacteria, since my understanding is that one of the main benefits claimed for eating raw meat is to get the good bacteria?
I look forward to your advice.
AnswerNo, marinating won't kill off parasites. Freezing for at least 14 days will work against parasites, according to Sally Fallon. However, it's a waste of time to freeze the meats. First of all, freezing damages the meat. Freezing ruptures the cell-membranes so that, once it starts thawing, the meat quickly loses its nutrients, so has to be eaten fast. People often, as a result, comment on the lack of taste of prefrozen raw meats, once thawed.
Also, very, very few RVAFers ever report getting parasites, given that animal carcasses are routinely checked for parasites, and the fact that animals routinely get dewormed in the West. The tiny one in a thousand who do get parasites report only getting them once or so, report no serious issues, and, anyway, can easily get rid of them with anti-parasite drugs available from any pharmacy.
Re bacteria:- Again, this is an irrelevance. The environment is far more important than the issue of bacteria. So, if you are eating raw, grainfed meats, which are very unhealthy, you might get a problem, but never with healthy, raw, grassfed meats. About the worst you could do is to eat cooked food that has been aged, as bacteria plus a toxic environment are very unhealthy. By contrast, numerous RVAFers eat lots of aged, raw meats without eveer getting a problem.
