QUESTION: Hi  - I have come across an excellent source of biodynamic meat here in the UK - they sell buffalo however I am not sure whether this is classed as bioD - anyway... my question....

Do you have any special recommendations re prep of raw meat?

the buffalo burgers I tried which I ate cooked were the best I've tasted - I thought it would be cool to eat these raw - they are gluten and rusk free and basically just have some bone stock sea salt and spices added.  I am unsure whether I should just stick to eating raw meat steaks or give the burger a go too!

ANSWER: You really need to eat fresh, raw 100% grassfed or wild meats without any extras like salt or spices. And forget bone-stock. Just eat the cheaper cuts like raw organic, stewing-steak or whatever, the cheaper cuts are just as healthy as the most expensive cuts like raw fillet-steak, so why bother paying so much more?

The point is that "organic" means absolutely nothing, nowadays,  especially in the UK. "Organic" labels mean so little, nowadays, so that the organic-consumer-bodies in the UK have been recently   arguing for replacing the whole "organic" category with  5 different categories of "organic". The highest level then would therefore be "wild game" with the next best being "grassfed animals with opportunity to forage", and the lowest level being those animals fed exclusively on grains and being very intensively-farmed in other ways.The point being that "100% raw, grassfed/nonorganic meats are way, way healthier for you than 100% raw/grainfed, organic meats".

Re prep of raw meat:- I only ever use a meat-knife for cutting my raw, grassfed or wild meats. This is only to prevent me from looking a bit foolish, as otherwise I would be using my teeth and having a little blood on my face. Otherwise, I view raw-meat_prep as wholly unnecessary.

QUESTION: thanks for the speedy reply - yes I understand that terms like organic and free range have become virtually meaningless in terms of a healthier product - laverstoke farm is biodynamic and as far as I'm aware biodynamic have a different certifying body than organic does; whats more the website states that their cattle feed on 31 different types of grass herbs roots etc...  Anyway i thought I'd let you know.

Thanks for the info re the difference between fillet and steak.  If you can also point me in the direction of any other good sources of grass fed meat - assuming you live in the uk I would be most grateful!

Thanks for the point re "biodynamic". I have been buying raw wild game almost exclusively for my raw animal food intake for many years, so I am not as familiar with the quasi-organic-type labels. The farm sounds great re mention of 31 types of herbs.

As regards UK raw meat sources, that's a toughie. Realistically speaking, I have found that each person usually has to make some hefty invidual effort to get hold of the sources of raw meats they need. This is because high-quality sources are often rare or just,each, only offer a limited amount of meats(such as those small farms which only slaughter 1 or 2 animals every 3 or 4 weeks) or because many small farms go out of business due to changing circumstances. Also, if one wants special foods such as particular raw organ-meats, then one has to do even more research than usual, as farmers usually just throw away the organ-meats due to lack of demand.
