Questioni bought a 1 pound hunk of raw grass-fed beef fat from muscle
trimmings from my butcher. i went camping, and the meat and
fat went unrefrigerated for 24 hours. i ate them both. the meat
was fine, but i'm wondering about the fat. it had a smell to it.
i stored them in a plastic bag with plenty of air. here are my questions :
- how do you store a big piece of raw beef fat ( has not been cut up )
for several days without refrigeration, or is this not recommended ?
- what about the underside of the meat / fat that is laying against
the plastic ? won't that side not get air ?
- what about the cut sides of the fat, won't they go rancid ?
- i love my raw paleo diet, but i also camp alot, and would like your
advice on multiple day storage of raw meat / fat without
refrigeration.

Just make sure to drink a lot of water to make up for the lack of water-content in the dried meats.
I go mountain-hiking every so often and have found that raw, nondried meats/fats are not a good idea to bring along. If I ever do, I make sure to eat everything in the first 3 days, but, unfortunately, the smell is still apparent to others, later on.My usual stance is just to mostly eat raw(relatively solid) plant foods for the 5-6 days I go hiking.Oh, I did once carry some vacuum-packed raw liver with me on a hiking tour, but it was a disaster as raw liver rots/ages faster than anything else given the high water-content, plus the bags started producing lots of gas so I had to surrepticiously hide and leave them under rocks to avoid the bags exploding in my rucksack later on.
Don't worry about the underside of the meat and the plastic. I've stored vacuum-packed meat in the fridge, with no air inside, for a week, without incident. It's generally after 8-10 days or so when the taste/smell becomes offensive to eat(this taste/smell is not natural like "high-meat", but rather more toxic in form). So, I always make sure to buy weekly supplies of raw meats/fats, and also store raw meats/fats in the freezer if I buy only every fortnight. If I make "high-meat" I always make sure to have enough fresh air in it.HTH, RPG.
