This is too in depth for me. Please let me know which vitamins/minerals that you are particularly interested in and I can try to give you a summary of each of their functions. but for me to go through ALL of the vitamins and minerals would take a lifetime!

Here is a website that I just found that does a very good job with giving a quick summary of each of the vitamin/mineral functions. It also gives the food sources and deficiency symptoms. I hope this is helpful for you! I actually saved it myself for quick references.
