Question
I'm sorry. I wasn't asking for you to put me on a diabetic diet. I just wanted to know what changes I can start making today, rather than waiting until I go back to the doctor and then see the dietician. I have two small children and feel I feed them a very  healthy diet: lots of vegetables, fruits, fish, chicken, whole grains, etc..., but also my husband and I tend to snack on things that are not healthy, and we don't eat the variety of fruits and vegetables that our boys do. Can you give me some suggestions as to what would be good snacks to eat? I don't see my doctor again until Oct. 19.

Since I do not know anything about your medical background I cannot legally give you specific advice.  What I can generally say is that the best route would be to stick to a healthy well-balanced diet.  Eat from all of the food groups: lean meats, fruits, vegetables, whole grains, and low fat or fat free dairy products.  Eat throughout the day!  And by that I mean 5-6 small meals per day so you are eating every 3-4 hours.  The best meals are ones that combine protein and starch and that also provide plenty of fiber, which will help to keep blood sugar stable. Stay away from foods that are very concentrated in sugar and the "junk" foods until you are able to sit down with someone and find out which foods are OK and which are not.  
Good snacks include low fat yogurt, 1/2 turkey sandwich (or other lean meat) on whole wheat bread, low fat cheese and crackers, fresh fruit (such as apple with peanut butter), pretzels, fresh veggies and low fat dressing, popcorn, graham crackers, baked tortillas and salsa, etc...

Just make sure when you do see the doc that you asked to be educated by either a dietitian or diabetes educator.  Make sure if you get a dietitian that he/she is experienced in this area!
