Question
I have been eating the dried vegetables from safeway which you can buy in bulk in the produce isle. Because this item is a bulk buy, there is not a nutrition label. I have been searching EVERYWHERE on the internet for nutritional information for this type of item, but I can't find anything. The mixture includes dried carrots, potatoes, green beans, squash, and zucchini, as far as i can tell. I am almost sure salt is added (which I am not too worried about), but I don't think anything else as far as oils etc. (I am hopeing). My question is, am I still getting the nutritional benefits of these veggies even though they are dried? I really enjoy them, and the squash, green beans, and zucchini are veggies I would never ever eat otherwise. Thanks! Lindsey

    Thank you for your nutrition question. You are still receiving nutrition benefits from dried vegetables however, they  have good and bad points. While drying vegetables can increase the proportion of vitamins and minerals, the drying process can also boost sugar contents. Dried vegetables can be a great source of fiber which helps you to feel full and less food cravings.  Let me know if you have more questions.
