Thank you for your nutrition question. All eggs, as well as the vegetarian fed Omega-3 eggs, have a freshness period. As they age, the whites become thinner and the yolks become flatter. I strongly suggest that you not use any eggs after the date on the package, regardless if it's expressed as "EXP", "Sell By" or "Best if Used Before" because a small percentage of eggs in the U.S. do run the risk of being contaminated with Salmonella enteritidis.
Use your eggs the week you buy them for best results.
Different methods to preparing them include poaching, boiling, and frying.
