Spinach & Artichoke Dip
Prep Time: 10 min
Total Time: 3 hr 10 min
Makes: 32 (2-Tbsp.) servings
1 container (16 oz.) BREAKSTONE'S or KNUDSEN Sour Cream
1 envelope GOOD SEASONS Italian Salad Dressing & Recipe Mix
1 can (14 oz.) artichoke hearts, drained, chopped
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1/2 cup chopped red pepper (optional)
1/4 cup chopped green onions
MIX all ingredients until well blended; cover. Refrigerate several hours or until chilled.
SERVE with assorted cut-up vegetables and pita chips.
Pumpkin Bread Recipe
PUMPKIN BREAD
2/3 cup sifted soy flour
3/4 teaspoon salt
1 cup sifted all-purpose flour
1/4 cup soy oil
1/4 teaspoon baking powder
1 1/4 cups sugar
3/4 teaspoon baking soda
4 egg whites, well beaten
1 1/2 teaspoons cinnamon
3/4 cup pumpkin, canned
1/2 teaspoon ground cloves
2 tablespoons water
1/4 teaspoon nutmeg
Sift and measure soy flour and all-purpose flour. Measure other dry ingredients except sugar, and sift together with flour. Set aside. Cream soy oil and sugar together. Add egg whites and beat until light. Blend in pumpkin and water. Add dry ingredients in two portions, blending well after each addition. Pour batter into greased 9x5x3 inch loaf pan. Bake at 350掳F 65 to 70 minutes. Remove loaf from pan immediately and cool on a wire rack. Makes 16 servings.

Rachel Ray's Quick Tiramisu
Ingredients
LADY FINGERS, 1 package
STRONG BLACK COFFEE or ESPRESSO, 1/2 cup
COFFEE FLAVOR LIQUEUR, 2 ounces (shots)
MASCARPONE CHEESE, 2 cups
POWDERED CONFECTIONERS' SUGAR, 1/2 cup
COCOA POWDER, 1/4 cup
GROUND CINNAMON, 1/4 tsp
Directions
Open the ladyfingers and separate them.
Paint the ladyfingers with coffee combined with the coffee liqueur using a pastry brush.
Line 4 martini glasses with a single layer of ladyfingers, letting the cakes overlap a bit at the stem.
Press the cakes down a bit to fit the lines of the glass.
Beat cheese and sugar together 2 or 3 minutes.
Spoon sweetened mascarpone into glasses.
Top glasses off with a cap of the ladyfingers.
Use any remaining mascarpone to dot the ladyfinger tops and sprinkle each glass with cocoa powder combined with a touch of cinnamon.
