Maltodextrin is a moderately sweet polysaccharide used as a food additive, unrelated to barley malt. It is produced from corn starch and is usually found as a creamy white hygroscopic powder. Maltodextrin is easily digestible, being absorbed as rapidly as glucose which is why it rates 100 on the glycemic index. It is absorbed extremely quickly even though it does not contain sugar. Foods high on the glycemic index are the ones absorbed the fastest by your body but not always high in sugar.
